Bonodori (Bon Dance) at J Center Mall Future Issues

The annual Bonodori (Bon dance) in Cebu was held at J Center Mall on April 28 and 29. I was actually not interested in the event in the first place, but it seemed that the largest booth had been cancelled or there was one left over, so I was invited to join the event and rented the largest booth (it was a large booth, so I could have a look at 99 RAMEN and the newly opened d:md:md:m). (Since it was a large booth, I participated with 99 RAMEN and the newly opened d:matcha.)

Since it is difficult to decide whether or not to participate in such an event when considering the profitability, I decided to open a booth completely out of my own pocket (tears) and 99 RAMEN would record the sales as a business, while d:matcha would recruit participants from 3D ACADEMY and ZEN English and donate half of the sales (the actual proceeds) to a charity. The other half of the proceeds will be donated to the charity.

This is the end of my involvement. In fact, I only helped with the ordering of advertisements, but I left the rest to them. As a result, there were no major accidents, and I am glad the event ended without incident. Thanks to everyone involved!

First, 99 RAMEN

99 RAMEN itself has experience in opening a restaurant at SUGBO MERCADO in the IT Park, and a core member of Ichikosha was in charge of the restaurant, so in general, it was as expected. Although there were times when it was quite busy, I think we were able to serve the ramen quite smoothly.

The best part is the taste. I believe that 99 RAMEN was the only place that offered authentic tonkotsu ramen in such a food stall. I haven't tried any other ramen, and I didn't even eat it to begin with because I didn't want to criticize it after eating it, but the ramen we were served was truly delicious Japanese ramen. And it was only 99 pesos.

This cup was created on the idea of the person responsible. They are quite good and appetizing as well. I'm glad I was able to experience this in person, as the new store openings just following J Center, Gaisano Country Mall, and Park Mall (scheduled to open May 10) will likely be using these disposable cups.

The most surprising thing was..,

RAMEN 90. Pacri, we welcome the creation of something that resembles our brand like this. There are restaurants that serve only ramen for as little as 75 pesos. The point is that you can eat authentic Hakata Tonkotsu Ramen for 99 pesos in Cebu Island, just like we do. As I mentioned earlier, I probably should have tasted and critiqued the ramen, but the ramen I had at a Japanese restaurant called 0000A was so bad that I avoided it.

How was the d:matcha

d:matcha managed to make a reasonable amount of sales with the help of the founding members and many people from the school. (99 RAMEN was larger in terms of sales.)

The president of D-matcha came to Cebu from 24-26 to taste the products and check our operations. He pointed out that we have lost the basic taste of our products, especially in terms of sweetness, because we are so conscious of the Filipino people. Once again, try each of the products locally as well,

Conveying the Authenticity of Japan

I realized the importance of this idea. We plan to go back to the basics once again and develop products based on Japanese taste. We will have a slightly less sweet taste, and add sweetness with syrup for those who need it. We will go back to the basics (Japanese-style service) and prepare for the opening.

Cooperation with Ikkosha

In fact, Ichikosha's core Filipino kitchen staff participated in the last ice cream creation training. This time, only the opening staff of the café participated in the tiramisu training,

Difficult to create sweetened products unless staff already has kitchen experience.

I found that this is the case. The Kyoto store also completely separates personnel between the hall and kitchen, and naturally they are separated at Ikkosha. We thought it would be nice to be able to do both since we had a small number of people to start up, but the reality was not so sweet. So,

Have Ichikosha staff involved in the production of sweetmeats.

The company has decided to do the same. Once again, we have realized the synergies of the food and beverage business. d:matcha's Robinson Galleria is scheduled to open on May 28.
